Last summer's popular "Melted White Peach Burrata" is back again this year! In addition to the dinner menu, it is also available as an on-menu item in the lunch course. Enjoy the luxurious combination of fresh, soft white peaches and milky cheese.

Ginza’s Italian restaurant cucina del NABUCCO has started a lunchtime course of its handmade signature cheese “melted seasonal fruit burrata”! You can enjoy the fresh taste of freshly made first thing in the morning.

 

Burrata” is a lovely drawstring-shaped cheese. It is a fresh cheese with finely chopped mozzarella and cream inside, and was born in Andria, located in the northern part of Puglia on the Italian peninsula. At cucina del NABUCCO, we handmake “melted seasonal fruit burrata” in our cheese factory, which is made with the freshest seasonal fruits, so that you can enjoy it in its freshest state.

This season, we have prepared a burrata filled with fresh and tender white peaches, and spread with 18-month aged prosciutto from Parma, which is sliced thin and fluffy after receiving your order.

The juicy, refreshing sweetness overflowing from the white peaches, the rich, creamy cheese that melts in your mouth, and the delicious, salty prosciutto. You will enjoy the most luxurious sweet and savory taste.

At lunch time, it is served as an appetizer for two of Nabucco’s popular courses. The white peaches and whipped cream melt as soon as the knife is inserted into the white, chewy cheese, giving the dish a live-action feel.

All fresh cheeses served at cucina del NABUCCO, including the seasonal fruit burrata, are carefully made one by one in our cheese factory.
We use fresh raw milk from Hida cows raised in the rich nature of Hida in Gifu. In order to produce delicious cheese, we control the freshness and temperature of the raw milk thoroughly and handle it “gently and without touching it” as much as possible, pursuing the smooth taste of cheese. This is cucina del NABUCCO’s commitment to cheese making.

In addition to Burrata, fresh cheeses such as Mozzarella, Ricotta, and Stracciatella are available at the restaurant, and can be enjoyed with seasonal ingredients.
